Vegetarian Eggplant Video
instructions for Easy this eggplant recipe
Slice your eggplant into 1/4″ slices, and place on a baking sheet lined with parchment paper.
Bake at 375 degrees for 7-8 minutes.
Whisk an egg in a bowl while the eggplant is baking.
Remove the eggplant from the oven.
Dip the egg plant in the egg and then in Panko and place back on the baking sheet.
Bake another 10 minutes until they start to brown.
Remove the eggplant from the oven.
Add a spoonful of spaghetti sauce on the eggplant, and then a slice of cheese on top. You can also use shredded cheese.
Place back into the oven until the cheese has melted.
Let cool slightly and serve.

Typically there is a step that includes salting and pressing the eggplant before cooking. I noticed you don’t include that and wonder how chewy the eggplant is in your recipe (which is why I think that other step is typically included). Also, I noticed there’s no salt and pepper or any other seasonings. Is that correct or was it left out somehow. I certainly like the simplicity of this recipe but I do have those questions. Thanks.
