Vegetarian Eggplant Recipe

Do you want an easy vegetarian eggplant recipe? I just recreated this fantastic recipe that I learned from my best friend!

Ingredients

  • Eggplant
  • Spaghetti Sauce
  • Eggs
  • Panko
  • Cheese

Instructions

  • Slice your eggplant into 1/4″ slices, and place on a baking sheet lined with parchment paper.
  • Bake at 375 degrees for 7-8 minutes.
  • Whisk an egg in a bowl while the eggplant is baking.
  • Remove the eggplant from the oven.
  • Dip the egg plant in the egg and then in Panko and place back on the baking sheet.
  • Bake another 10 minutes until they start to brown.
  • Remove the eggplant from the oven.
  • Add a spoonful of spaghetti sauce on the eggplant, and then a slice of cheese on top. You can also use shredded cheese.
  • Place back into the oven until the cheese has melted.
  • Let cool slightly and serve.
