What is squash casserole? My recipe consists of a lot of flexible ingredients that can be adjusted for many people’s tastes.

What ingredients are needed for squash casserole?
These are the ingredients you’ll need
- 1 can black beans
- 2 cans cream of mushroom soup
- 1 package Seeds of Change Quinoa, Brown & Red Rice, with Flax Seed
- 1 cup sliced carrots
- 1 cup sliced celery
- 1 1/2 cups vegetable broth
- 1 cup cooked squash . I used fresh baked pumpkin but you can use yellow squash, summer squash, etc.
- Salt & black pepper to taste

HERE ARE THE INSTRUCTIONS
- Put vegetable broth, seasonings, celery, and carrots in a slow cooker and cook on low for 6 hours.
- Add remaining ingredients and cook on low for 1 more hour
Options:
- Add a protein – chicken or beef
- Use other kinds of fresh squash – acorn, zucchini, yellow, butternut, spaghetti
- Use chicken broth
- Add spinach or other leafy greens
- Use another creamy soup like celery or chicken
- Add onion
- Add additional seasoning – fresh thyme, cayenne pepper, garlic, etc.
- Sprinkle the top with cracker crumbs
Spoon into a bowl and enjoy!
Store leftovers in an airtight container in the fridge or freezer.
Other tips to add to your casserole:
- sprinkle cheese like cheddar cheeses, parmesan cheese, or mozzarella, etc on the top and bake until melted
- Melt butter and mix with crackers (like Ritz Crackers) to make a buttery cracker topping you can sprinkle on top of the baking dish.
- Add sour cream to make it extra creamy.
- Add some large eggs for extra protein
- Add yellow onion or other vegetables for more flavor.
- This recipe is great for freezing, just cover with plastic wrap or aluminum foil

- 1 1/2 cups vegetable stock
- 1 cup cooked squash I used fresh baked pumpkin
- Salt & Pepper to taste
Instructions
- Put chicken broth, seasonings, celery, and carrots in a slow cooker and cook on low for 6 hours.
- Add remaining ingredients and cook on low for 1 more hour.
