How do you make baked spinach and cheese? How do you use frozen spinach? Today I’m sharing our healthy spinach casserole.

What ingredients do you need to make spinach casserole?
- 4 eggs
- 2/3 cup flour
- 2 10 oz packages frozen spinach (thawed and squeezed)
- 24 oz. cottage cheese
- 3 cups shredded colby jack cheese
- Salt & Pepper to taste
- Optional – chicken

Mix eggs with flour until smooth, add remaining ingredients and stir well to blend.

Coat a 2 quart casserole dish with oil. Spoon spinach mixture into prepared dish. Bake uncovered at 350 for 75 minutes.

It’s ready to eat! This makes a great vegetable side dish for the holidays as well.
