Greek Yogurt Egg Salad Ingredients

  • 1 dozen hard-boiled eggs
  • 1 8 oz. container of non-fat plain Greek yogurt
  • 8 oz. mashed avocado
  • 1 TBSP lime juice
  • 1 TBSP Dijon mustard
  • Salt and Pepper to taste

Peel the eggs, rinse them off, and place them in a bowl.  Mash the eggs into small pieces.  I like using a potato masher to get the job done quickly.
