Do you want a greek yogurt egg salad recipe? I have a recipe that is healthy and not only includes greek yogurt but avocado too.

We had some of our eggs left after dying them so I’ll be using these. You’ll want to start with hard-boiled eggs.
Greek Yogurt Egg Salad Ingredients
- 1 dozen hard-boiled eggs
- 1 8 oz. container of non-fat plain Greek yogurt
- 8 oz. mashed avocado
- 1 TBSP lime juice
- 1 TBSP Dijon mustard
- Salt and Pepper to taste

Greek Yogurt Egg Salad Instructions
Peel the eggs, rinse them off, and place them in a bowl. Mash the eggs into small pieces. I like using a potato masher to get the job done quickly.

Add the container of Greek yogurt to the bowl.

Mash enough avocados to equal 1 cup, and add 1 tablespoon of lime juice. Mix them together.

Add 1 Tablespoon dijon mustard and mix all of the ingredients together. I found that I preferred about 3 tablespoons in this mixture, so feel free to adjust to your taste. Add Salt and pepper to taste and mix everything together.

One thing I love about this recipe is that you can adjust it however you like. You can eliminate any of the above ingredients, swap out mayonnaise for Greek yogurt, and add ingredients like bacon, dill, hot sauce, peppers, etc.
