  • I box Funfetti Cake Mix
  • 2 Eggs
  • 1/2 cup oil

Depending on where you live you may need to add additional flour.  For example, I’m at a high altitude so I add 1/4 cup of all purpose flour.

1. Place the 2 eggs, and oil into a mixing bowl

I use a 1 Tablespoon cookie scoop and you can make larger cookies if you like. This will approximately make 32 cookies.

My aunt always said lightly drop the pan onto the counter to help the cookies set. Then let them cool completely before trying to remove them from the tray.

Additional Options:

  • Add marshmallows
  • White chocolate chips
  • Vanilla extract or almond extract
  • Serve warm with ice cream to make a special dessert 
  • Dust with some powdered sugar
  • use butter instead of oil
  • add a pinch of salt

Other notes:

  • Edible Cookie Dough – be careful as bacteria can grow on the dough. Make sure to keep it in the refrigerator or freezer.
  • Consuming raw cookie dough with raw eggs is not usually recommended
  • You can roll the dough into cookie dough balls like mom used to do, and place them on a prepared baking sheet for cooking instead of using the tool I recommended, then place them in the oven.
  • You can use a mixer instead of stirring the batter by hand.
  • You can use a regular cake mix and add a cup rainbow sprinkles
  • If you don’t want cookies, turn them into cupcakes instead
  • Using the cake mix is easy, you could make your own and include all of the ingredients like baking soda, brown sugar, raw flour, baking powder, unsalted butter, etc. I like making this recipe easier by using the cake mix. No need to measure, just mix and go.
