Today I have a quick and easy healthy rhubarb crumble recipe for you. You’ll only need a few ingredients and you can freeze it for later. This is one of my favorite desserts because it pairs the sweetness of strawberries with the tartness of rhubarb.

  • 2 cup Strawberries
  • 1 cup Blueberries
  • 1/2 cup Sugar
  • 2 Tbsp Lemon Juice
  • Cornstarch
  • Graham Crackers

I decided to thicken it a little by making a mixture of 1 tablespoon cornstarch, and a little bit of water.  I slowly stirred this into the rhubarb mixture.  Once I got the consistency I desired, I removed the compote from the burner.

You can let it cool at this point and freeze it for later if you like. You can also serve this over vanilla ice cream, or spread it on toast or bread.

I placed graham crackers on the bottom of a square baking dish and poured the compote mixture on the top.  I placed it in the refrigerator to set and cool.

You could alternatively place the compote on the bottom and sprinkle the crushed graham cracker on top.

Another alternative is a crumble topping. Combine 1/2 cup flour, 1/2 cup sugar, coconut sugar or brown sugar, 4-5 tablespoons melted butter, and 1/2 teaspoon cinnamon. Combine in a bowl and refrigerate. Cover and store leftovers in the fridge.

Some like to change things in the rhubarb crisp recipe up. If you have ideas like how to make it gluten-free, ways to make it vegan, etc Please add your information to the comments below. Ideas include:

  • use rolled oats instead of instant
  • Use a sugar-free sweetener, orange juice, or maple syrup, instead of refined sugar
  • use almond flour in place of white flour
  • Use coconut oil to grease your pan
  • Add vanilla extract for more flavor
