Ingredients needed

  • Pecan Pie Mix from Mad Dash Mixes
  • 1/2 cup Non-Fat Plain Greek Yogurt
  • 2 Eggs
  • Optional Pecans

I placed the eggs, yogurt, and pecan pie mix together in a batter bowl.  I stirred the ingredients until they were mixed together.

Here are the instructions

I placed the eggs, yogurt, and pecan pie mix together in a large bowl. Whisk or stir the ingredients until they are mixed together.

You can add pecans here if you like or skip this step. My husband and I both like pecans but our kids don’t so I decided to skip this step. By using the greek yogurt I incorporated a little nutrition in the form of protein into the muffins.

I placed paper muffin cups into my muffin pan and I used a cookie scoop to place the batter in the muffin cups.  I decided to sprinkle on a little cinnamon and sugar onto the top.  I also had a little bit of brown sugar to use up so I placed a little bit of that on top of the muffins as well.

I placed paper muffin paper liners into my muffin tin and I used a cookie scoop to spoon the batter in the muffin cups. I decided to sprinkle on a little cinnamon sugar mixture on top to amp up the cinnamon flavor. I also had a little bit of brown sugar to use up so I placed a little bit of that on top of the muffins as well.

(If you don’t want to use muffin liners spray the pan with cooking spray.) You could alternatively make a coffee cake instead of the muffins by placing the mixture in a square baking pan.

You can make a streusel topping or cinnamon streusel if you prefer.

I will add, that I should have broken down the brown sugar clumps more as you’ll see what that caused after baking.

I placed the muffins in the oven and baked at 350 degrees for 8 minutes.

I pulled the muffins out and let them cool complete.

Test the muffins by poking a toothpick into it, if it comes out clean you’re done, if not put the muffins back in.

Do you see those “holes”? Those are from the brown sugar clumps. They melted into the muffin causing that hole. They look funny but taste delicious.

Let them cool and serve.

Now I’m all about shortcuts, but if you prefer you could use dry ingredients and wet ingredients like baking powder, melted butter, salt, all purpose flour, etc
