How do you make a good slow cooker vegetarian chili? I have recipe we love and you can easily adjust by adding or subtracting ingredients, and you can add meat if you like.
What are the ingredients you need for this vegetarian chili?
- 1/4 sliced onion
- 3 cups vegetable broth
- 2 cans black beans rinsed and drained
- 2 cups cooked pumpkin or squash of your choice (you could use 1 can of pumpkin as well)
- 1 cup chopped celery
- 1 cup chopped tomatoes
- Add seasonings to taste – salt, pepper, chili powder, dried oregano, cumin, garlic
- Optional – add turkey, chicken, or beef

Place all of the ingredients above in a slow cooker and place on high for 4 hours or preferably on low for 6-8 hours.
You could put this in an Instant Pot as well.
