What are the ingredients you need for this vegetarian chili?
HERE ARE THE INGREDIENTS YOU’LL NEED
- 1/4 sliced onion
- 3 cups vegetable broth
- 2 cans black beans rinsed and drained
- 2 cups cooked pumpkin or squash of your choice (you could use 1 can of pumpkin as well)
- 1 cup chopped celery
- 1 cup chopped tomatoes
- Add seasonings to taste – salt, pepper, chili powder, dried oregano, cumin, garlic
- Optional – add turkey, chicken, or beef

Here are the instructions
Place all of the ingredients above in a slow cooker and place on high for 4 hours or preferably on low for 6-8 hours.
You could put this in an Instant Pot as well.

Chas, this sounds delicious! I just made Split Pea & Ham soup in my crockpot. This one will be next. I love that you can use canned pumpkin as I have several cans that I haven’t used yet!
