What are the ingredients you need for this vegetarian chili?

HERE ARE THE INGREDIENTS YOU’LL NEED

  • 1/4 sliced onion
  • 3 cups vegetable broth
  • 2 cans black beans rinsed and drained. You can also add kidney beans or pinto beans
  • 2 cups cooked pumpkin or squash of your choice (you could use 1 can of pumpkin as well)
  • 1 cup chopped celery
  • 1 cup chopped tomatoes
  • Add seasonings to taste – kosher salt, pepper cloves garlic, or other spices like chili powder, dried oregano, ground cumin, cilantro, garlic
  • Optional
    • add protein – turkey, chicken, or ground beef
    • add bell pepper, corn, fire-roasted tomatoes, or a potato or sweet potatoes

Place all of the ingredients above in a slow cooker and place on high for 4 hours or preferably on low for 6-8 hours.

  1. Chas, this sounds delicious! I just made Split Pea & Ham soup in my crockpot. This one will be next. I love that you can use canned pumpkin as I have several cans that I haven’t used yet!
