We make Bailey’s Chocolate Cake every year to celebrate St. Patrick’s Day.  It is one of our favorite chocolate cake recipes. It’s a really easy dessert and I’ll share some tips along the way.

For this recipe you'll need: A box of chocolate cake mix of your choice, the ingredients to make that cake, instant chocolate pudding (4 serving size), Bailey's (optional)/Irish Coffee Creamer, and whip cream topping.

What are the ingredients needed for a chocolate cake with Bailey’s?

  • A box of chocolate cake mix of your choice
  • The ingredients to make that cake
  • Instant chocolate pudding (4 serving size)
  • Bailey’s (optional)/Irish Coffee Creamer (you can try other liqueurs depending on your tastes)
  • Whip cream topping.

*Tip – I use unsweetened applesauce instead of vegetable oil.  Cuts down on the fat and keeps the cake extra moist.

Bake your cake according to the box instructions.

Place the batter mixture in a cake pan and bake in the oven according to the box instructions. Don’t forget to use the cooking spray to coat the pan.

While your cake is baking, mix your pudding mix according to the package instructions. Once mixed place in the refrigerator.

When your cake is done, pull it out and let it cool completely.

You can check to see if it’s done by pushing a toothpick inside and seeing if it comes out clean.

Once completely cooled, poke holes in your cake. (I use the back of a spoon handle)

Pour 1/2 cup Bailey's onto the cake (aim for in the holes to get it good and soaked in). *If you don't want Bailey's in your cake you can opt for an Irish coffee creamer instead or skip this step completely.

Spread the chocolate pudding on next and cover the cake completely.

Top with your whipped topping.

Frost with your whipped topping. If you are up for the challenge you can make a buttercream frosting in any flavor you like.

Decorate the top with drizzled chocolate syrup, chopped chocolate (I used chocolate chips), or leave plain. The cake is ready to eat. If you are not eating it right away it is best to keep it in the refrigerator until ready to serve.

What food goes well with Baileys Irish Cream?

It’s great in coffee, and any warm drink that you would put a creamer in. It goes really well with chocolate. You can add it into cake, cupcakes, cheesecake, & brownies.

What should you not mix with Baileys?

Since it is like a creamer, do not mix it with any thing that would make milk curdle as a rule of thumb.

Is Bailey’s good in coffee?

Yes Bailey’s is great in coffee.

What can I use instead of Bailey’s Irish Cream

You can substitute Bailey’s Irish Cream for a non alcoholic Irish creamer.

Does Bailey’s Irish Cream need to be refrigerated?

No you do not need to keep your Bailey’s Irish Cream in the refrigerator. We tend to keep ours in the refrigerator. On the occasion we do drink it, we like it cold.

How can you tell if Bailey’s has gone bad?

Bailey’s does have an expiration date of roughly 2 years.

You can make a butter cream frosting or a powdered sugar frosting with some heavy cream instead if you prefer. Make your cake from scratch if you prefer with some eggs, baking soda, cocoa powder, salt, baking powder, etc. I like to go the easy route.

Add some extra flavor with some espresso powder, vanilla extract, etc. You can add some protein by adding some large eggs.

You can use any irish cream liqueur you want.

I like to store mine in an airtight container (like the 9 x 13 pan above that comes with a lid). You could also put plastic wrap over it.
