Easy Zucchini Salad
Can you eat zucchini raw in a salad? Yes, you can! After breast cancer, my doctors put me on a plant-based diet. I love vegetables, so this was an easy transition. Here is an easy raw zucchini salad recipe that our family loves. It makes the perfect side dish for just about any meal.

Here’s the list of ingredients you’ll need:
- 1 large zucchini
- Cherry Tomatoes
- 4 TBSP Feta
- Sliced Almonds
- Olive Oil
- Lemon Juice
- Salt and Pepper to taste

HERE ARE THE INSTRUCTIONS
Mix the olive oil, lemon juice, salt & pepper together and set aside.
Cut the ends off the zucchini, and peel the outer skin off.
Use the vegetable peeler to continue making thin zucchini ribbons until the whole thing is peeled.
Place the zucchini and tomatoes in a bowl.
Add feta, sliced almonds, and the olive oil mixture.
Toss the salad.
Serve immediately or chill until ready to serve.
Recipe Alternatives:
- You can add pecans, walnuts or pine nuts instead of almonds if you prefer.
- Try this with yellow summer squash.
- Add fresh herbs such as fresh basil or fresh mint.
- Add lemon zest and fresh lemon juice.
- Add the raw zucchini salad to pasta to make a pasta salad.
- Serve as a side dish with chicken or steak.
- Add red onion.
- Experiment with different cheeses such as goat cheese or parmesan cheese.

- 1/4 cup Sliced Almonds
- 1 & 1/2 TBSP Olive Oil
- 1 TBSP Lemon Juice
- Salt and Pepper to taste
Instructions
- Mix the olive oil, lemon juice, salt & pepper together and set aside.

- Chop the tomatoes in 1/2.
- Place the zucchini and tomatoes in a bowl.
- Add feta, sliced almonds, and the olive oil mixture.
- Toss the salad.
