Can you eat zucchini raw in a salad? Yes you can! After breast cancer, my doctors put me on a plant based diet. Here is an easy zucchini salad recipe that our family loves.

Here’s the list of ingredients you’ll need:
1 large zucchini
Cherry Tomatoes
4 TBSP Feta
Sliced Almonds
Olive Oil
Lemon Juice
Salt and Pepper to taste

Mix the olive oil, lemon juice, salt & pepper together and set aside.
Cut the ends off the zucchini, and peel the outer skin off.
Use the peeler to continue making thin slices with the zucchini until the whole thing is peeled.
Chop the tomatoes in 1/2.
Place the zucchini and tomatoes in a bowl.
Add feta, sliced almonds, and the olive oil mixture.
Toss the salad.

Serve immediately or chill until ready to serve.
