Easy Chopped Celery Salad
What can I make with a lot of celery? I had a ton of celery and made this easy chopped celery salad with just a few ingredients. This salad adds crunch and fiber to any meal.

Ingredients needed for celery salad
- 4 cups celery chopped into chunky pieces – you can use the celery stalks, celery rib, celery leaves or celery sticks. If you don’t like the celery strings you can use a vegetable peeler to remove those before you cut the celery.
- 2 cups green or black olives
- 1/4 cup olive juice
- 2 Tablespoons olive oil
- 2 teaspoons Italian seasoning
- Salt and pepper to taste

Here are the instructions for your salad
Wash, pull apart and cut celery then place in a large bowl.
Add your olives to the bowl.
Add the olive juice, olive oil, and seasonings.
Mix all of the ingredients together.
Chill in the fridge or serve immediately. You can store left overs in the refrigerator.

Depending on your taste preferences, or what you have on hand you can adapt this salad to your taste by adding:
- onion
- cabbage
- broccoli
- tomato
- fennel
- garlic

Pull off all of the slices, and cut them into strips, Store celery in a sealed container with a little water to keep it crisp. Once you have chopped all of this up with a chef’s knife (make sure to use a sharp knife) on a cutting board, I sometimes place it in a freezer bag to use later in soup or stew. Don’t forget the root end too, that is lovely to eat. I love to add these ingredients to a dish to add some extra flavor. Take that celery and chop it into large chunks, dice celery, and put it in so many things like jambalaya, sauces, etc.
I grew up eating celery with peanut butter in the middle, did you? We also love to eat our celery with blue cheese dressing when eating hot wings. Prep your celery by washing it well to get rid of dirt.
Now I know what to do with my celery! I usually make celery juice but this looks much better!
