Healthy Spinach Casserole

What ingredients do you need to make spinach casserole?
THESE ARE THE INGREDIENTS YOU’LL NEED
- 4 eggs
- 2/3 cup flour
- 2 10 oz packages frozen chopped spinach (thaw and squeeze out the excess liquid)
- 24 oz. cottage cheese
- 3 cups shredded colby jack cheese. You could use cheddar cheese or parmesan cheese if you prefer.
- Salt & Pepper to taste
- Optional – chicken, turkey or ham
HERE ARE THE INSTRUCTIONS
Mix eggs with flour until smooth, add remaining ingredients and stir well to blend.
Coat a 2 quart casserole dish with oil. Spoon the spinach mixture into prepared baking dish. Bake in the oven uncovered at 350 for 75 minutes.
It’s ready to eat! This makes a great vegetable side dish for the holidays as well.
Store the leftovers (if you have any!) in an airtight container in the refrigerator.

- butter or olive oil
- cream cheese, heavy cream, whole milk, or cream sauce
- nutmeg

- panko breadcrumbs or Ritz crackers
- mozzarella cheese
