I love my Crock-pot!  I have had friends call me the Crock-pot queen.  If I can figure out how to make something in a Crock-pot, I will.  I don’t know about you, but in the summertime I don’t usually want to run my oven if I don’t have to and so my Crock pot comes in handy.  During the school year I’m always running kids everywhere as well as working, etc so I love my Crock-pot to have meals ready when we need them.  Today I ‘m sharing Crock-pot Enchilada Stew!

WHAT INGREDIENTS ARE NEEDED FOR ENCHILADA SOUP?

What ingredients are needed for Enchilada soup?

  • 1 pound ground beef
  • 1 can tomato sauce
  • 1 can cream of chicken soup
  • 1 can green chili sauce
  • cheese
  • tortilla chips

What are the instructions for enchilada soup?

I place in 1 pound ground beef in my crock pot and break it up.  If I’m in a hurry, I’ll throw it in frozen.  If you do throw it in frozen, just come back about 1-2 hours later and break up the meat inside and stir it.

Add 1 can tomato sauce, 1 can cream of chicken soup, and 1 can green chili sauce.  You can substitute things like cream of mushroom/celery, enchilada sauce, etc.  Add beans, sour cream, and any additional touches you'd like.

What can I add to my enchilada soup?

You can really add anything you like, but a few great additions might be avocado, corn, onions, green chiles or peppers.

Can I add meat to the enchilada soup?

This soup would be great with shredded chicken. The easiest thing to do is use rotisserie chicken, but you can also cook chicken breasts or chicken thighs and shred them for the soup.

What spices go well with enchilada soup?

Depending on the spice level you are going for you can add chili powder or a pinch of cayenne pepper to taste. If you want the mexican flavor without the spice you can add cilantro or a bit of cumin.

Does enchilada soup keep?

Store any leftovers in an airtight container in the refrigerator.

    Sounds delicious, my friend! I, too, LOVE to use my slow cooker in the summer and tonight’s supper was made in…yep, you guessed it…my slow cooker 🙂 I will definitely have to try this recipe sometime soon.

  2. Mmmmm that looks good! For some reason, I don’t think to use my crock pot in the summer. I think because it’s on my counter and it spreads heat. This really does look good though. Maybe I’ll pull it out of my pantry and fire it up just to try this. 🙂 We tend to use the grill or have a cold meal in the summer.

    1. Thanks Linda, it works especially well for those days you have to go out and want to come back with the meal ready any time of year of course 😉 For us it helps on dance or baseball nights. Or just when we’re out having fun in the summer and want to come home and everything is ready.

    I have recently downsized from a house to a lovely apt. The floor plan is very open and the kit. is exposed to the living area. I cannot close off the cooking area, and heat from kit. warms the whole area, which kicks off the (expensive) ref. air unit.

    My solution to the problem of summer kit. heat and cooking indoors was to set up an outside kit.! I put my crock pot, insta pot,toaster oven, and electric grill on a folding table in the fenced in porch area! The only thing I am missing is a hot plate.

    Saving A/C cost and cooking simple summer meals!
