Ingredients

  • 1 dozen hard-boiled eggs
  • 1 8 oz. container of non-fat plain Greek yogurt
  • 8 oz. mashed avocado
  • 1 TBSP lime juice
  • 1 TBSP Dijon mustard
  • Salt and Pepper to taste

Instructions

  • Peel the eggs, rinse them off, and place them in a bowl.
  • Mash the eggs into small pieces. I like using a potato masher to get the job done quickly.
  • Add the container of Greek yogurt to the bowl.
  • Mash enough avocados to equal 1 cup, and add 1 tablespoon of lime juice. Mix them together.
  • Add 1 Tablespoon dijon mustard and mix all of the ingredients together.
  • Add Salt and pepper to taste and mix everything together.
