Delicious Bailey's Chocolate Cake

We make Bailey’s Chocolate Cake every year to celebrate St. Patrick’s Day.  It’s a really easy recipe and I’ll share some of the tips along the way.

Ingredients

  • A box of chocolate cake mix of your choice
  • The ingredients to make that cake
  • Instant chocolate pudding 4 serving size
  • Bailey’s optional/Irish Coffee Creamer
  • Whip cream topping

Instructions

  • Mix your chocolate cake mix following the box instructions.
  • Bake your cake according to the box instructions.
  • While your cake is baking, mix your pudding mix according to the package instructions.  Once mixed place in the refrigerator.
  • When your cake is done, pull it out and let it cool completely.
  • Once completely cooled, poke holes in your cake.  (I use the back of a spoon handle)
  • Pour 1/2 cup Bailey’s onto the cake (aim for in the holes to get it good and soaked in).  *If you don’t want Bailey’s in your cake you can opt for an Irish coffee creamer instead or skip this step completely.
  • Spread the chocolate pudding on next and cover the cake completely.
  • Top with your whipped topping.
  • Decorate the top with drizzled chocolate syrup, chopped chocolate (I used chocolate chips), or leave plain.  The cake is ready to eat.  If you are not eating it right away it is best to keep it in the refrigerator until ready to serve.
