Amazing and Easy Slow Cooker Vegetarian Chili

How do you make a good slow cooker vegetarian chili? I have recipe we love and you can easily adjust by adding or subtracting ingredients, and you can add meat if you like.

Ingredients

  • 1/4 sliced onion
  • 3 cups vegetable broth
  • 2 cans black beans rinsed 1/4 sliced onion
  • 3 cups vegetable broth
  • 2 cans black beans rinsed and drained
  • 2 cups cooked pumpkin or squash of your choice you could use 1 can of pumpkin as well
  • 1 cup chopped celery
  • 1 cup chopped tomatoes
  • Add seasonings to taste - salt pepper, chili powder, dried oregano, cumin, garlic
  • Optional - add turkey chicken, or beefand drained

Instructions

  • Place all of the ingredients above in a slow cooker and place on high for 4 hours or preferably on low for 6-8 hours.
