It’s up to you if you want chewy or crispy cookies. You can change this recipe up and make peanut butter cookies, or other variations. The only difference is using a different Betty Crocker or Duncan Hines cake mix. If you want you can make cake mix cookie bars instead, but I just love these yellow cake mix cookies because they are so easy to make. I think they taste better than the Pillsbury pull apart and bake cookies. You can use an electric mixer so you don’t have to stir, and instead of folding the ingredients together by hand. You might have to add a little flour depending on your altitude.

You can put the leftover cookies in a freezer bag and pull the cookies out slowly so you don’t eat them all in one setting. You could even roll the cookie dough into little balls and freeze it that way, then you can pull out a couple of balls and bake them in smaller amounts. Just pull out the cookie dough, let it set to room temperature, place them on a baking sheet, bake, remove it from the oven, let it cool slightly, and eat.

    I’ve used this recipe for years except not with avocado oil; the recipe called for 2/3 C. butter or margarine. Interesting! One of the favorites people like is Butter Pecan cake mix and mini choc. chips. I have used cherry chip cake, lemon cake, spice cake, pretty much any cake mix (NOT angel food!) with a variety of baking chips. It is definitely easy and do very good!
