Ingredients

  • 2 cans cans of chicken, drained and shredded
  • 1 cup strawberries, chopped
  • 1/8 cup 1/8 cup of roasted sesame seeds
  • 1/2 cup cashews, finely chopped
  • 1/4 cup olive oil
  • 2 tbsp balsalmic vinegar
  • 1/4 tsp pepper
  • 1 tsp salt
  • 1 tbsp sugar

Instructions

  • Start by opening the cans of chicken and draining them. Place the chicken in a bowl and use a pastry blender or fork to shred it into small pieces.
  • Take the 1/2 cup of cashews and place them in a chopper. Chop them finely and add them to the bowl with the shredded chicken.
  • Next, take the 1 cup of strawberries and chop them using the chopper. Add the chopped strawberries to the bowl with the chicken and cashews.
  • Toast the 1/8 cup of sesame seeds and add them to the bowl with the rest of the ingredients.
  • Mix all the ingredients together thoroughly and set the mixture aside.
  • In a separate measuring cup, combine the ingredients for the dressing. Mix together 1/4 cup of olive oil, 2 tablespoons of balsamic vinegar, 1/4 teaspoon of pepper, 1 teaspoon of salt, and 1 tablespoon of sugar. Stir until well blended.
  • Pour the dressing over the chicken mixture and mix everything together until the dressing is evenly distributed.
  • The salad is now ready to serve! You can enjoy it over a bed of fresh Red Leaf or Spring Leaf mix, or you can serve it on bread for a delicious sandwich.
