Easy Pumpkin Spice Muffins

I have had this recipe for so long that I can’t remember who passed it to me.  I am so excited to share it with all of you and I’ll give you all our little secrets to go along with it.  These easy pumpkin muffins are usually gobbled right up in our home.  They are wonderful when you need to make something fast for school, potluck, work, new neighbor, or even a quick snack or you kids/grandkids.

For the base you need a box of cake mix and a can of pumpkin - that's it!

The best part is that it all starts with 2 ingredients!

THESE ARE THE INGREDIENTS YOU’LL NEED

For the base you need a box of cake mix and a can of pumpkin pie filling – that’s it!

(I’m using spice cake mix – but you can use yellow cake mix or any cake mix you want.) I love this recipe because it’s easier than other pumpkin recipes. You don’t need all of the dry ingredients and wet ingredients like butter, flour, pumpkin pie spice, baking soda, vanilla extract, salt, you get it the list goes on and on. You could use your own pumpkin puree rather than canned pumpkin.

This recipe could also be turned into pumpkin pancakes, or even a regular cake, and spruce it up with some cream cheese frosting.

HERE ARE THE INSTRUCTIONS

Stir these 2 ingredients together in a bowl.

You can fill your muffin pan up right now or …

You can add so many things to this muffin recipe. Try carrots, raisins, eggs, pecans, walnuts, wheat germ, yogurt, etc.

You can also add additional fall spices to taste, this includes nutmeg, allspice, ginger and cinnamon.

Scoop your batter into your muffin pan. You can make 12 larger muffins or 24 medium muffins. The batter is dense so it will not rise much.

Place your muffins in a preheated oven at 350 degrees.

Bake for 25 minutes.  (Ovens vary in times, so be cautious the first time you make them.)

Poke a muffin with a toothpick and if it comes out clean – they’re done.

      1. Hi Chas, I tried the muffins and although I really like making a recipe exactly as the author posts it the first time I make it, I had to make a few changes. I knew my mom and husband wouldn’t like spice cake, so I used carrot cake mix. I wanted to put chocolate chips in, but didn’t because they only had a huge box at the store I went to. So the final verdict was: My mom didn’t like them, which was no big surprise. My husband and I really liked them a lot. Especially the next day. I put them in a baggie and they were just as moist as they were when I first made them. I did spritz some oil on the paper muffin cups and they didn’t stick at all. Have you tried this with a banana break mix or some other quick bread mix? I wonder if that would work too.

        1. I’m so glad you gave them a try and way to go for adapting the recipe to fit your family better! I have done a lot of mixing and matching with cake box mixes but I haven’t specifically tried a quick bread mix. I would think it should work just as well as the mixes are very similar. I’m sure the pumpkin with a pumpkin, cinnamon, or gingerbread mix would be wonderful. You have intrigued me, I just might have to give it a try 🙂

  6. I made it with a quick bread mix and it worked great. I made it in an 8×8 glass baking dish and it came out perfect. This time my mom actually liked it. We actually bought some more to make.

  15. I’m not a fan of pumpkin spice, but my husband ADORES it. He rarely buys anything pumpkin spice simply due to the fact he focuses on picking up treats that work for both of us more often than not. That being said, I am going to have to use this recipe to treat him with a little special surprise. I can just imagine his face when he comes home to the smell of freshly baked pumpking spice muffins!

Because I have several boxes of Yellow and White cake mixes on hand that I would like to use, do you have any suggestions for how much each of individual spices to use or how much pumpkin pie spice to use in order to achieve a similar taste as if using a spice cake mix. will appreciate your help with this.
