Easy Black Bean Soup

Okay, please don’t let the title scare you.  I am not always a “bean soup” fan but this one I truly love and the best part is that it is SO easy!!!  One of the other great parts – it is inexpensive to make!

You will need the following ingredients:

3 Cans Black Beans – un-drained

1 can chicken broth

1 16 oz jar of salsa of your choice

2 Tbsp. lime juice

1/2 c. sour cream

1 Tbsp. cumin

Red Pepper – optional



Place 2 cans of black beans and 1 can of chicken broth in blender, and blend until smooth.

Pour mixture into slow cooker and add last can of black beans into the mixture.



Add your jar of salsa, 1/2 cup sour cream, and 2 Tbsp. lime juice and mix in.

Add in your cumin and optional red pepper.



Stir, put lid on, and cook on low for 8 hours (preferred) or high for 4 hours.  The longer you cook the more flavor and spiciness comes out.

Enjoy!

Not only great for a quick dinner, but great for holiday gatherings, teacher appreciations, etc., and it’s very easy to double the batch.
